Our twist on this classic Italian drink is the ultimate tannic marriage of two Crab Apple Schnapps vintages. Harvested from our own Crab Apple trees in the summers of 2019 and 2020, this “Bellini” style drink pays homage to our garden-to-glass ethos of the Black Swan.
A cordial of foraged elderflower compliments the acidic intensity of this drink, with subtle floral notes and a light sweetness creating a beautifully balanced and exciting flavour profile on both the nose and the palate.
To finish, our exclusive, limited-edition sparkling wine by Charles Palmer vineyards gives an effervescent finesse to this delicious cocktail, best enjoyed as the perfect dinner aperitif.
